Chocolate Souffle

 125 g chocolate
 2 tbsp milk
 75 g caster sugar
 4 egg yolks
 6 egg whites
 pinch of salt
 double cream, to serve

preheat the oven to 200C, Gas 6 and Butter your souffle dish.
Melt the chocolate heatproof bowl with the milk. set the bowl over a pan of gently simmering water
stirring the chocolate and milk occasionally to mix them together.
Remove the pan from the heat, place the bowl on your worktop and then beat in the sugar and egg yolks to form a smooth paste.
Set to one side.
In a clean bowl whisk the egg whites with the salt until stiff peaks form when the whisk is removed. loosen the chocolate mixture by beating in a good spoonful of the beaten egg whites
Next, using a spatula, gently fold the chocolate mixture into the remaining egg white.
Pour the mixture into your prepared dish and place the dish.
The middle shelf of the oven
Bake the souffle for 20 minutes.serve the souffle with a jug of cold cream alongside.
